Popovers

I find it a little bit wonderful that pretty much the same ingredients you need to make crepes are the  ones you need (in slightly different proportions) for making these popovers.

And, like crepes, you can fill these little air puffs with delicious things. A friend of mine told me about an apple butter and honey filling (placed under the batter before baking) that I'm excited to try, but this lazy Saturday morning breakfast featured the standard condiment shelf of honey, jam and peanut butter. Plus the last three eggs I had in the fridge, which I scrambled with Parmesan and parsley.

I've tried a couple different recipes for popovers, including one that is extremely time-consuming and calls for clarified butter, rest time and lots more eggs, but the one from Joy of Cooking is a sure bet and takes just less than an hour from start to finish.

Mornings are getting darker and colder again. It's nice to keep warm in the kitchen and light some candles at the breakfast table.
