The recipe – or more accurately, the photo – that sold me on
Melissa Clark’s Cook This Now cookbook
was for Mallobars. It’s a recipe based on the beloved mallomar. I actually would have
never known about this delicacy were it not for the millions of times I've watched When Harry Met Sally, where Billy Crystal references mallomars during a phone conversation with Meg Ryan. Apparently it’s
an east coast thing, but all coasts know and love s’mores. Graham cracker + marshmallow + chocolate. Same diff.
Of course, while I was drooling over glorious food photography in Ms. Clark's book, I initially didn’t notice that this recipe takes three days to complete. In my case, the graham cracker layer was made on Tuesday night and chilled in the fridge until Wednesday, which was when I baked it. The marshmallow layer was made Wednesday night so it could set overnight. And on Thursday morning, the chocolate glaze was whisked together and the three elements became one. On Thursday night, I went into a deep sugar coma.
Three cheers to me: now I know how to make my own graham crackers and marshmallows!

And though it took three days, who cares? Worth the trouble. Truth be told: the hardest part was cutting them into bite-sized squares. (Do NOT cut the squares as big as the book would like to make you think you need to cut them. You'll probably die. These are that rich.) You'll need a very sharp knife.
