Healthy meal



Sweet potatoes, mushrooms and kale are sautéed with a little garlic, placed on a bed of rainbow quinoa, sprinkled with parmesan. Total whole-foods hippie meal, especially since it all came from my Fresh Abundance box. But healthy, gratifying, texturally satisfying. Great leftovers for tomorrow's lunch.

  1. Wow--looks great. I have never been a big fan of sweet potato, but this looks like a good, but not overwhelming, combination.

  2. Sweet potatoes have been a turn-off to me, too, until recently. (I had a hard time getting over the sweet potato/marshmallow combo I remembered as a kid at Thanksgiving...waaaaaay to sweet.) I do like them in a more savory dish. You should try it!
